The approach

Natural wine isn't a trend. It's a return to the essentials, the vine, the soil, the winemaker's hand. In Marseille, Paul Defais selects these wines directly from the producers and brings them to you for private tastings and group workshops.

Understanding

What "natural" actually means
Definition
Naturalwine.

Natural wine is made with no chemical inputs at the vineyard or in the cellar. No herbicides, no pesticides, no industrial yeasts, no acidity correctors, no chaptalization. Hand-harvested grapes, spontaneous fermentation, minimal or zero sulphites.

It's not an official label, it's an ethic shared by independent winemakers who trust the living over the chemical. The result: wines that express their terroir without manipulation, with all the variability that implies.

The Mediterranean, Provence, the Languedoc, Greece, Spain, is one of the richest territories for natural wine production. The sun, poor soils, and the work of committed small producers yield wines of rare precision.

What changes

From conventional to natural
01
The Vineyard

Organic or biodynamic farming. No herbicides, manual or horse-drawn soil work. The vines struggle, the roots dig deep, the terroir expresses itself.

02
The Harvest

Hand-picked at the moment chosen by the winemaker, not a machine. Whole clusters arrive in the cellar, without oxidation or brutal mechanical sorting.

03
The Cellar

Spontaneous fermentation using indigenous yeasts, those that live naturally on the grapes. No additions, no corrections. The winemaker guides without forcing.

04
The Bottle

Little or no sulphites. No filtration that strips the aromas. The wine can evolve, breathe, surprise. A living wine, in the literal sense of the word.

"
Paul Defais

Natural wine isn't strange. It's simply honest. What you feel in the glass is the soil, the season, and the decision of a winemaker who corrected nothing. That's rare. And that's what we explore together in Marseille.

Questions

Natural wine in Marseille
What is natural wine?
Natural wine is made with no chemical inputs, at the vineyard or in the cellar. No herbicides, no industrial yeasts, no correctors. Spontaneous fermentation, hand-picked grapes, minimal sulphites. The result: a wine that expresses its terroir without manipulation.
Where to find natural wine in Marseille?
Paul Defais selects Mediterranean natural wines directly from independent growers and brings them to your Airbnb or villa in Marseille for private tasting sessions. It's the best way to discover these wines: guided by someone who knows the producers personally.
Does natural wine taste weird?
No. A well-made natural wine is precise, lively and expressive. It may surprise on the first glass, more character, less standardisation. That's exactly what the tastings explore: understanding what you feel, without prejudice. Beginners are always the most open to it.
What natural wines come from near Marseille?
Provence is one of the birthplaces of natural wine in France. Domaines from the Baux-de-Provence, Bandol and the Luberon produce remarkable biodynamic wines. Grenache, Mourvèdre, Syrah, the southern French grape varieties suit natural winemaking beautifully.
Can I book a private natural wine tasting in Marseille?
Yes. Paul Defais comes to your Airbnb, villa or terrace anywhere in Marseille. Private session: 3 natural Mediterranean wines, 1h30, guided in English, up to 10 guests. €70 per person. Use the contact form on the wine tasting page or write to contact@pauldefais.fr.
What's the difference between organic and natural wine?
Organic certification covers vineyard practices (no synthetic pesticides) but doesn't regulate what happens in the cellar. An organic wine can still contain high sulphites, industrial yeasts, and acidity correctors. Natural wine goes further, it applies to the entire chain, from vine to bottle.
